Tiramisu is a classic Italian dessert that traditionally uses ladyfingers. You can use Bob's Red Mill 1:1 Gluten-Free Baking Flour to create a gluten-free version.

Ingredients:

For the Ladyfingers:
- 1 1/4 cups Bob's Red Mill 1:1 Gluten-Free Baking Flour
- 1 1/4 tsp baking powder
- 4 large eggs, separated into yolk & whites
- 1/2 cup sugar
- 1 tsp vanilla extract
- A pinch of salt

For the Tiramisu Filling:
- 1 1/2 cups mascarpone cheese
- 3/4 cup sugar
- 1 1/2 cups heavy whipping cream
- 2 tsp vanilla extract
- 1 cup brewed espresso or strong coffee, cooled
- 1/4 cup coffee liqueur (optional)
- Dark chocolate shavings or ground coffee beans for garnish

Directions:

1 - Make the Ladyfingers:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, sift together the gluten-free flour and baking powder.

In a separate bowl, beat the egg yolks with 1/4 cup of granulated sugar and the vanilla extract until thick and pale.

In another clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and beat until stiff peaks form.

Gently fold the egg yolk mixture into the beaten egg whites.

Gradually fold in the sifted flour mixture until fully incorporated.

Pipe the batter into ladyfinger shapes on the prepared baking sheet.

Bake for about 12-15 minutes or until the ladyfingers are lightly golden and springy to the touch.

Allow the ladyfingers to cool completely.

2 - Prepare the Mascarpone Mixture:
In a mixing bowl, combine the mascarpone cheese, 3/4 cup of granulated sugar, and vanilla extract. Mix until smooth and creamy.

In a separate bowl, whip the heavy cream until it forms stiff peaks.

Gently fold the whipped cream into the mascarpone mixture.

3 - Assemble the Tiramisu:
In a shallow dish, combine the brewed espresso or coffee with the coffee liqueur (if using).

Dip each gluten-free ladyfinger into the coffee mixture, making sure not to soak them for too long.

Arrange a layer of dipped ladyfingers in the bottom of a serving dish or individual serving glasses.

Spread half of the mascarpone mixture on top of the ladyfingers.

Add another layer of dipped ladyfingers on top of the mascarpone mixture.

Finish with the remaining mascarpone mixture.

4 - Chill and Serve:
Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.

Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings, if desired.
